TUSCAN SALAD

I discovered this refreshing combination of pears , pecarino cheese and salad greens in a small restaurant in the town of Montepulciano. Nestled high in the hills of Tuscany, the town is famous for it's pecarino cheese made from sheep's milk and their vineyards that produce, Vino Nobile, which is one of Tuscany's most elegant wines.

ASSEMBLE salad greens, ( new dandelion greens would be a treat) on individual plates

TOP greens with 1/2 thinly sliced pear ( a crisp, firm not overripe pear) and thin slices of pecarino cheese ( a cheese slicer works well- you might even be able to get curls of cheese)

DRIZZLE with a vinaigrette dressing
