This is an innovative way to use leftover turkey.

Turkey Mole

SAUTE 1 minced onion and 4 diced cloves of garlic

ADD chunks of leftover turkey, 1 1/2 cup orange juice, 1 chopped dried pasillo pepper, 2 TBS water,1/3 cup madeira, 1/3 cup red wine, 2 TSP ground ancho chili, salt, pepper, a dash of hot sauce, 1 TBS balsamic vinegar, 4 TBS grated chocolate, 1/3 cup slivered almonds

COOK over medium heat until turkey and sauce have melded (about 10-15 minutes)

SPRINKLE 2 TSP arrowroot over mole, stir and cook until sauce thickens

SERVE over rice
