This smoky, tart cabbage dish is a perfect compliment to a pork roast. Serve with mashed sweet potatoes that have a touch of ginger and nutmeg and you'll have a colorful and aromatic winter meal.

Alsatian Red Cabbage

SLICE 1 small head of red cabbage and 1 Granny Smith apple and put aside

SAUTE 3 thick slices of smoked bacon that had been cut into small pieces and 1 sliced onion

ADD cabbage and sliced apple

ADD 1/3 cup balsamic vinegar and 1/3 cup apple cider plus 2 TBS sugar, salt and pepper

STIR frequently until cabbage is limp and check seasoning ( if it is too tart add sugar, if it is not tart enough add a dash more vinegar

Cover and put in 350 degree oven for 45 minutes, stirring occasionally
