This is an delicious solution for leftover meat . You can also add any leftover vegetables you might have even potatoesit can only enrich the texture and flavor. It's especially good with leftover lamb or roasted chicken. The recipe will also work if you want to start from scratch with fresh ingredients-just saute the meat with the onion before adding the rest of the ingredients. SAUTE one large chopped onion in 3 TBS oil MAKE a paste of 3 cloves finely chopped garlic, 3 tsp curry powder,1TBS ginger, salt and pepper, 1/2 tsp red chili powder or tabasco sauce ( more or less depending on how much heat you want), 1/2 tsp worcestershire sauce ADD paste to onion and cook for 2 minutes then STIR in and cook for 2 minutes 1/2 cup grated coconut, 1/2 cup peanuts (slivered almonds or cashews are also good), 1/2 cup raisins., 1/2 sliced apple( optional), 2 TBS mango chutney and 3 cups leftover meat or vegetables ADD 2 cups chicken stock, stir, cover and simmer until flavors have melded and mixture is hot and ready to serve ( 15- 20 minutes) |
