Porkloin with Dijon Apricot Glaze Slow-roasting and this sweet yet piquant glaze keeps this porkloin tender and succulent
Preheat oven to 325 degrees F.

Spread a mixture of equal parts Dijon mustard and apricot jam over the porkloin

Place in a 325 degree F. oven and slow roast for 1 hour @ pound

ADD chicken stock and a splash of marsala wine whenever the bottom of the pan gets dry

Sauce

REMOVE porkloin from pan and let rest

REDUCE drippings with 1/2 cup sherry or marsala

SEASON with salt and pepper and 1 tablespoon fresh sage

ADD 2 TBS creme fraiche

WHISK together and simmer for 2 minutes

SLICE pork and drizzle sauce over the meat or serve separately
