Cajun Rice & Beans with Okra
This is a great dish for Lent that you can serve with bruchetta and a green salad. You an also serve it with a roast pork, lamb or grilled meat for a non-vegetarian meal. SAUTE in olive oil one sliced small onion or two large shallots, two diced tomatillos and 1 tsp mustard seeds CUT the stem ends off of 18-20 large okra and add to onion and tomatillo mixture COOK until okra is tender ADD to above one 14.5 oz can of diced tomatoes ( fire-roasted if you have them) one 20 0z. can of kidney beans, four cups of cooked rice ( brown rice gives it more texture), 2 tsp chili powder. 1/2 tsp ground pepper, salt to taste, 1/4 cup of barbeque sauce STIR and heat until all of the flavors and ingredients are melded together Serves four |
