Recipes for people who hate fish...

Fish is good for you — rich in Omega 3 oils, low fat, easy to digest— yadda, yadda, yadda, but if you don't really like it, it's an effort to make it part of your life. Here are some recipes that might change your mind.

It's all in the sauce! Try baking any kind of fish filets —cod is good for starters—with any of these toppings

Chutney for Cod

SAUTE 1 small onion diced fine, 2 diced plum tomatoes, 1 chopped tomatillo in olive oil

ADD 1 generous TBS balsamic vinegar, 2 tsp sugar

SIMMER for 30-35 minutes

COVER cod and bake until done

SERVES two

Apple & Red Pepper Sauce

SAUTE in butter, 1 sliced apple, 1 sliced red pepper, 2-3 TBS capers, 2 diced shallots

ADD splash of Madeira, 1 tsp of brown sugar and 1 TBS rice wine vinegar,salt and pepper

COVER fish filets and bake until done

Mango Chile Sauce

COMBINE 2 Diced & sliced mangos,1 finely diced shallot, 2 chopped tomatillos, and 1 TBS balsamic vinegar and SAUTE for 5 minutes

SAUTE floured fish filets and

COVER with sauce

DRIZZLE with Thai Sweet Chili Sauce

and BAKE for 20-30 minutes or until fish is done
