SAUTE 1 small onion diced fine, 2 diced plum tomatoes, 1 chopped tomatillo in olive oil ADD 1 generous TBS balsamic vinegar, 2 tsp sugar SIMMER for 30-35 minutes COVER cod and bake until done SERVES two |
SAUTE in butter, 1 sliced apple, 1 sliced red pepper, 2-3 TBS capers, 2 diced shallots ADD splash of Madeira, 1 tsp of brown sugar and 1 TBS rice wine vinegar,salt and pepper COVER fish filets and bake until done |
COMBINE 2 Diced & sliced mangos,1 finely diced shallot, 2 chopped tomatillos, and 1 TBS balsamic vinegar and SAUTE for 5 minutes SAUTE floured fish filets and COVER with sauce DRIZZLE with Thai Sweet Chili Sauce and BAKE for 20-30 minutes or until fish is done |
