German Potato Salad

BOIL 8 medium Yukon Gold potatoes with skins on

CUT into 1/2 inch slices and toss with 4 TBS olive oil, salt and pepper in a large bowl

Dressing

SAUTE 1 cup cubed (3 thick slices) smoky bacon and one large chopped onion

ADD 5 TBS water, 5 TBS balsamic vinegar, and 1 TBS sugar

SIMMER for 5 minutes and toss with potatoes

SEASON with salt and pepper

GARNISH with chopped parsley

Serves six
