This a Swiss-style salad that has a sweeter dressing to accommodate the escarole which is rather bitter.

Escarole and Endive Salad

CHOP one small head of escarole into thin slices

SLICE 3 endive

Dressing

(mix with whisk in bottom of salad bowl)

1/3 cup olive oil

1/4 rice wine vinegar

1/2 teaspoon honey mustard

1 TBS lite mayonnaise

1 TSP sugar, salt and pepper to taste

ADD escarole and endive and 2 chopped hard-boiled eggs and toss
