Chicken Cassoulet

SAUTE 4 whole cloves of garlic and one sliced onion in olive oil

ADD & BROWN cut up chicken parts and one or two sliced hot Italian sausages (smoked sausage like kielbasa is also good)

ADD one 28 oz. can of diced tomatoes

ADD 2 TSP each of majoram, thyme, basil and oregano, 1/4 TSP nutmeg, a cinnamon stick, and salt and pepper

SIMMER covered for 1 hour, uncover and cook for another 30 minutes or until chicken is tender and sauce gets thick

ADD two 15oz cans of cannellini (white kidney) beans and cook uncovered for another 15-20 minutes

SERVE with crusty French bread
