Chicken Bianco

SAUTE 2 chicken breasts and 3 sliced shallots in olive oil

ADD
2/3 c. Martini Bianco vermouth (not extra dry)

BROWN
chicken for 3-5 minutes on each side

ADD
4-6 firm plum tomatoes and 1-2 green tomatoes (or if you don't have green tomatoes you can use 3 tomatillos cut in half)

ADD fresh handful of majoram, thyme, & oregano ( 1 tsp each of dried)

SEASON
with salt & pepper

ADD
1/2 c. black olives

STIR
gently keeping tomatoes intact

COOK
until liquid is reduced to a sauce and chicken is done

TIP-
add 1/4 c. chicken stock if it gets too dry during cooking

Serve
over plate of fettucine
