Low Fat Mint Broccoli Soup This creamy & cool broccoli soup with a hint of mint is delicious served with a Chicken Caesar Salad for a light summer meal!
CHOP four medium sized heads of broccoli ( about 6 cups)

COOK in 2 1/2 cups vegetable broth until tender

COOL mixture of broth and broccoli and PUREE along with 3 heaping TBS of chopped fresh mint (or use 1TBS dried mint- or more according to your taste)

ADD 1 cup fat -free half and half

( Land O'Lakes makes this and it should be available in most supermarkets..soy creamer works well also) to the mixture

ADD 1 heaping TBS No-Fat Sour Cream, 1/2 tsp salt and cracked pepper to taste

BLEND together, chill and garnish with fresh mint
