Beet Salad with Feta This is a great combination of quick-roasted beet root, feta cheese and greens for a refreshingly different summer salad

WRAP two large beets in saran wrap and microwave on high for 13 minutes until tender

PEEL and CUT beet root in half

PLACE each half on the cut side down and DICE (one half of a beet root is enough for one serving)

LAYER a plate with salad greens, the cubed beet root, crumbled feta cheese and sprigs of fresh majoram (a pinch of dried majoram will do)

DRESS with a Dijon Vinaigrette
