This is an easy but elegant dessert that can be on the table in 45 minutes!
Apple with Puff Pastry and Caramel Sauce

CORE 4 apples and fill with brown sugar and raisins

ROLL out two sheets of puff pastry dough (Pepperidge Farm is great)

CUT squares large enough to envelope an apple

ENCASE apple with square of dough (gather it together at bottom of apple and make tiny slits on top for steam)

CUT leaves out of any left over dough and layer on apple

PLACE on cookie sheet lined with parchment paper

BRUSH apples with 1 beaten egg

BAKE in 375 degree oven for 30 minutes

GARNISH with a sprig of mint

Caramel Sauce

MELT equal parts butter and brown sugar

When it bubbles STIR in light cream until you have the desired consistency

SIMMER for 1 minute stirring constantly

DRIZZLE on plate around apple
